Healthy breakfast vegetables in bone broth with a poached egg
Ingredients:
In a tablespoon of butter or more saute in a pan:
1 chopped zucchini
1/2 head of chopped broccoli or more
300gms sliced mushrooms
1 handful of sliced kale or other leafy green
1 bok choy sliced
1 handful of green beans chopped
(may use any vegetables that you have, don't be restricted by my preferences)
Add 1 cup or more of bone broth with 1 tablespoon of vegetable stock concentrate
Once the vegetables begin to simmer, and are cooked to your liking, carefully crack 1 or 2 eggs into pan. Cover with a lid till eggs are done, season and garnish with fresh herbs
