Cauliflower Mash
I was in heaven when I discovered Cauliflower Mash. I don't miss having white potatoes at all, and when served with a gravy, like in the picture above, well what is there to miss about potatoes.
It is ridiculously easy, well my version anyway
Ingredients
1 head of cauliflower
1 cup of chicken broth or filtered water
Seasoning to taste
Method
Break up cauliflower into small cauliflowerettes and place in saucepan with a steamer basket. Add broth and simmer gently until cauliflower is soft. This may take 1/2 hour. Remove steamer basket and blitz cauliflower with a stick blender till smooth. Season to taste and serve with a drizzle of olive oil or a knob of butter.
