Pancakes
If you are looking twice at this picture, yes you can believe it, these are GLUTEN FREE, DAIRY FREE, healthy pancakes that are delicious. These are without doubt one of the best pancake recipes that I have tried that are thin, light and tasty. The added bonus is that they are good for you with added fibre with the coconut flour, protein from the eggs, resistant starch from the tapioca and almond milk which is a fab source of magnesium. Takes me 10 minutes to make and I get about 8 pancakes.
Ingredients:
2 eggs
1 cup of full fat coconut milk or almond milk
1 tbs of olive oil
3/4 cup of Tapioca flour
2 tbs of coconut flour
1/4 tsp of pink salt
Heat a skillet with macadamia oil on a medium high heat. Mix all ingredients together until a smooth consistency. If it is too thick add water or coconut milk.
Pour 1/4 cup of mixture into heated pan. Rotate pan until mixture spreads into an even sized pancake. Flip when you see bubbled appearing on the surface.
Cool on oven tray.
