Nut Milks
When we think of nut milks, or dairy alternatives we often think of the tetra packs in the supermarkets. Of course these are fabulous when we transitioning to a dairy free lifestyle or wanting a quick alternative. Please choose the organic versions that don't have the harsh chemicals and additives.
But can I let you into a secret. When you have all the ingredients and tools on hand, making nut milks is easy. You just have to move past your mental block.
Here is the formula:
1 cup of nuts whether it be sunflowers, almonds, brazil. A combo works well using almonds as a base.
4 cups of filtered water
You need to have:
A nutr bullet or a high speed reliable blender
A nut bag (essential)
Method
Soak almonds and/or brazil nuts overnight in filtered water and a pinch of salt. Soak sunflower seeds for a couple of hours in the same way.
Add 1 cup of soaked nuts to 2 cups of filtered water.
Blend on high to a smooth consistency
Place nut bag over into a jug and pour nut mixture into bag and squeeze out excess milk.
Add remainder of water
Stir well and refrigerate.
Variations:
I like to keep everything simple, but if you would like a sweeter version add a medjool date and a dollop of vanilla paste or vanilla seeds to flavour.
I will often do an almond milk and add a tin of coconut milk mix well and use in coffee and teas as a dairy alternative.
