Quinoa Salad with Fresh Herbs

This is one of my go to salads when I am feeling like a break from the usual meals that I cook.  To get the best results with Quinoa it is essential that you rinse it thoroughly, before cooking to remove any bitterness.  Quinoa is one of those great seeds rich in protein that is handy to have in single portions frozen or kept in the fridge.

Ingredients 
1 bunch of parsley, washed and chopped
1 bunch of coriander, washed and chopped
1 bunch of mint, washed and chopped
1 generous handful of spinach or other leafy green
1 cup of cooked quinoa 
1 onion finely chopped
1 lebanese cucumber finely chopped
Dressing
Olive oil and lemon juice
Seasoning

Method
Mix all ingredients together.  Add a splash of olive oil and the juice of 1/2 lemon.  Season and enjoy

Variations
Add a can of wild caught salmon
Chop up some tomatoes, red capsicum or other vegetables as desired for more colour and flavour
