Banana and Cinnamon Muffins
160gms Almond meal
40gms of Flaxseed
60gm of coconut oil
`100gms of Rapadura sugar or Rice Malt Syrup
2 tbsp of Coconut flour
2 tsp of cinnamon
1 tsp baking powder
1/2 tsp of pink salt
1 tbsp apple cider vinegar
2 large or 3 small bananas mashed
Combine dry ingredients. Mix well. Combine wet ingredients and mix well except banana. Add together, lastly folding through mashed banana.
Pour mixture into muffin tray filling muffing holes 1/2 cm from top.
Place in fan forced oven of 175C for 20 - 30 minutes or until firm to touch.
Watch them disappear.
