Chicken Tray Bake
This is a simple and nutritious mid week meal that is ready in 35 minutes. Serve with salad or steamed veg
Ingredients:
4 Chicken Marylands (works well with any cut of chicken)
3 Garlic cloves crushed
1 Punnet of cherry tomatoes
1 Bunch of asparagus, chopped into equal sized pieces leaving the woody stems (these are a fabulous source of resistant fibre that is good for our beneficial bacteria)
Olive OIl
1 Tablespoon of paprika or more
1 Tablespoon of oregano or more
4 slices of low nitrate bacon
Method:
Cut slits into the flesh of the chicken and massage with olive oil, garlic, oregano and paprika making sure to do both sides. Place into a baking tray sprinkle with tomatoes, chopped asparagus and drizzle with olive oil. Add strips of bacon. Place into a hot oven 190 - 200 c for 35 minutes or until bacon is crispy and chicken is cooked. Enjoy
