Easy Guacamole
Guacamole is simple and can be used as an accompaniment with fajita, chilli con carne, with steak or fish or as a dip with vegetables or corn chips. Another favourite is to mix with green pesto and toss through pasta. Kids won't even know!
Ingredients:
2 ripe avocado, flesh scooped into a bowl
1/4 of an onion finely chopped
Squeeze of half a lemon
Seasoning (I prefer to use Himalayan or Pink Murray River Salt for this recipe)
Method:
Mix all ingredients together and serve. Often I will leave it chunky or for variation I will blend it to make it smooth. Adjust lemon and seasoning to taste.
Optional:
Add 1 finely sliced and deseeded tomato
Add finely chopped fresh chilli to taste (leave seeds in for a hotter experience)
Add handful of chopped coriander
