Krys' Baked Beans

My kids used to love tinned baked beans. I new exactly why when I looked at the label and read the ingredient list. High Fructose Corn Syrup. An addictive and dangerously bad for you processed sugar. It had to go, finding a good recipe for baked beans hasn't been so easy that the kids will like. Criteria: it has to be rich in flavour, have some sweetness, not too many lumpy bits and delicious. I think I might have it.
Ingredients:
1 x 375gm packet of white beans soaked overnight in water and cooked till soft. Make sure that you scoop off the white foam. ( Can use 4 tins of beans of any type drained and washed)
4 Rashes of bacon (optional)
1 onion chopped finely
1 jar of tomato passata
2 tsp of sweet paprika
1/2 tsp of ground chili
1 tbsp Macadamia or Olive oil
2 tbsp of Maple Syrup or to taste
2 tbsp of tomato paste
Salt to season, or 1 tbsp of vegetable stock concentrate
Method:
In a saucepan, chop bacon and fry till crisp in oil. Add chopped onion and sauté till soften. Add spices and sauté till aromatic. Add remainder of ingredients: Beans, tomato passata, maple syrup and salt or stock concentrate and simmer till beans are softened.
Serve with Paleo Bread as a lunch or part of a big breakfast.
