Spinach, Zucchini and Feta Tart
For the base use recipe for Cauliflower Pizza Crust
Place base into flan tin, making sure that you oil tin well. Bake in oven for 20 minutes or till coloured. Cool slightly then add tart filling.
Ingredients
250g Spinach
1 large zucchini grated
1 onion finely diced
1 garlic clove crushed
1 tablespoon of olive oil
4 eggs
250g of feta cheese
1/2 teaspoon of nutmeg
Seasoning
Method
Sautee onion and garlic in oil till transparent. Add zucchini and spinach and sauté till spinach wilts. In a separate bowl crack eggs, add feta, breaking up, nutmeg and seasoning. Add onion mixture to eggs and mix. Pour into cauliflower tart base. Cook in moderate oven till golden and mixture is firm. Cool and remove from pan.
